No ship has a 360° firing arc in X-wing. The YT-1300 has a regular firing arc which is marked on it's base and a turret primary weapon which allows it to fire outside that arc.

You must have enemy ships inside the printed firing arc to be able to use Jyn's ability.

And how about Fin (crew) and Rey (Pilot) the same rule is applying?

A firing arc is still a firing arc, no matter whose ability is requiring it. Any ability that states "inside your firing arc" will be referring to the printed arc. Note that some abilities may require a ship to be inside a primary firing arc, and others may just say firing arc. An ability that requires a primary firing arc will only use the forward facing firing arc. An ability that does not specify "primary" and just says "firing arc" can include an auxiliary firing arc (such as the rear facing firing arc on the ARC-170, Firespray-31, etc).
