A master jedi.
Joking aside he was a great believer in following the living force so very likely Ascetic , some other consular specs with Ataru mixed in, as hr was quoted as being an Ataru master. To be honest you will get 10 answers all different.
I could maybe see him being something of a Mystic: Advisor or Sage.
I would say Consular: Arbiter/Ataru Striker/Teacher.

I think he was clearly a human Jedi.
Well however we decide to stat out Qui Gon we should all know he has very particular set of skills.
I think Qui Gon's force powers are more important than his specific career and specializations. Digging into foresee, seek, and sense trees turns a Jedi into a mystic whether they took that spec or not. You could really build him with just about anything. I might go for Mystic, Ataru Striker, and Teacher.
Sentinel, shadow. n00bs.

Synchronicity! I was actually watching that movie while you were typing ...
Given how standard martial things are for Jedi, I would say you would have to base it more on how he behaved, than how he swung his saber.
He was very focused on protecting others around him, in particular Anakin. Him yelling for Anakin to get down when he senses Maul coming for example, telling him to "stay in that cockpit" is another example. He was even willing to gamble with the lives of Anakin and his mother to try and free Anakin from slavery, though the altruism in this act is debatable. All this feels more like the mindset of a Guardian to me. The need to protect, to shove himself into the affairs of others on the behalf of those who can't do it for themselves. Willingness to cheat to try and accomplish those goals (using the Force to make sure Anakin's color came up on the chance cube), all point to his need to protect and defend being the paramount drive in his mind. This is a Guardian through and through. The saber style is sort of irrelevant really, as the moves are all very fluid depending on the situation, and the use of Force abilities are basically "yeah? He's a Jedi....they ALL do that kind of stuff in the movies", so that doesn't help either. And besides, there is nothing stopping a Jedi from taking a fighting style outside of their career, especially since some of the characteristics associated with a spec tree, don't always synch up well with the dominant trait for another in that class. So if he was say, a high Wisdom trait Guardian, it would make sense for him to take that one, instead of the Intelligence based one in the Guardian tree.
So yeah, I say Guardian, just based on his behavior.
