How different would a droid brain (or organic brain) starfighter be?

The Limited keyword isn't necessary. None of the ones that are Limited actually have any effect with multiple copies anyway.

Advanced Systems and Neural Network could be stacked without the Limited keyword, I guess.

My guess not much

At first I thing Droids should not have the focus action but instead they went with droids just don't have high pilot skill. Chopper is what 5 and IG-88 (all types) is only 6.

Everything proposed here, also they could take extra damage from ion.

I did a Vulture droid custom expansion:

So assuming that a droid starfighter could work like this, droid brain computers could act as upgrades instead of pilots.

Those ones yeah, true.

The evade action, turns to banks, and focus action though, will never stack with each other.

have dials without as much red on (as they can take harsher manoeuvres without stress than squishy organic pilots

Star Wars ships have inertia damping, pulling to many G is not a limiting factor for organics.
The IG-2000 pulls maneuvers out of the platform which would be impossible for organics because it does not waste energy on those dampers, though TIE-Fighter pull a similar trick off by leaving the life support normally to the pilots suits.
