I use to buy enough to spam a full list of generics. After an interview with the developers about focusing on Aces I started cutting back as I know this is not a valid theory anymore.
I buy one of each, and if I like a ship, multiples, like 2 fang fighters.

U-Wing that gets a specific mod that drops the cost or allows it to field extra crew and all crew at a discount (how Rogue One would that be? 3-4 crew on there each with a 1 point reduction)

And a new EPT called Survival Reflexes: TIE only, equippable only if you have 0 shields. Once per round, After an enemy ship executes a maneuver and ends its movement within range 1 of your ship, you may perform a free barrel roll or boost action.
1 of each large/huge, and 2 of each small is a goal.

Depends a lot on looks and paintability. I also do normally try to refrain from mixing timelines. I like snubfighters much more than big ships, I have only 2 large based ones.
I have e.g. 4 X-wings, 11 TIE/ln, 5 Z95s, 5 Kihraxzes, but also 2 Quadjumpers (nice for scenarios, Empire patrol cracking down on a criminal cargo exchange in deep space).
Then is X-wing not my only hobby, and real life (and reason(!)) restricts how much I spend on ships. Sadly some got powercrept before I even bought them...not much reason to pick them up now.
As for Ace packs:
Scarif pack containing updated U-Wing and Y-Wing. We have 10 T65 X-wing pilots, but still only 4 Y-wing rebel pilots. The Y-wing model could do with an update, the rebel version looks bad, and there is only 1 pack where you get it, whereas 3 sources of T65s. An astromech helping the X could be in there without requiring an X-wing model.
I try to have 1 copy of each scum ship, I want to buy a second Aggressor (Obvious reasons) and Jumpmaster, just for another two Mindlinks and Guidance Chips. I do not like to play with more than one turreted ship.
In certain time maybe I'll buy more Khiraxz fighters and Protectorate starfighters for thematic lists of Black Sun and Mandalorian Protectorates, respectively.

1 for large ships, 2 for small ships. 4-5 if the small ship can fly as a squadron (like A-wing or TIE).
