Im very new to this great game! Can´t find how to use the grey (defence) dice in a weapons attack pool ( example 1 blue and 1 grey). Does it only mean that i have 1 extra defence dice when im attacked?

I guess you're making a salad. The gry dice are used only to defend, not to attack.

Leewroy is correct, there are no gray dice in attack pools... where are you seeing one?
May be a colorblindness issue?
I had a friend who was color blind and often had to ask us what the actual attack pool of certain weapon cards was.
You will never find the defense dice (brown/gray/black) in a figure's attack pool.

Do you have an expansion with a green die yet? it might be worth checking if you can distinguish them (if it helps, there is always an expansion icon in the bottom right of the card. The green dice will only show up in certain expansions).
I don't think anyone in my family is colorblind, but when I told them you just grab the dice shown on the card, some of them pick up the gray die instead of the blue.
Also, I don't have it in front of me, but I'm pretty sure the colors of the dice icons are not completely consistent across the expansions. For instance, compare Nerekhall Plate to Chainmail. In my set, the Nerekhall Plate die icon is much darker.
That's a different issue though.
I had the same issue. I think it's a matter of different printings of the cards. I have the original base game set (with the included Shadow Rune campaign) and the "blue" dice look functionally identical to the "grey" dice on two faces, and only blue on one. Other cards from other sets seem to be much "bluer" in their attack dice.
