Curious -- why is MArgin of Victory used, and calculated the way it is, in X-Wing?
Why isn't a simple running total of points of ships destroyed maintained instead? It seems simpler -- so what's the benefit of the added complexity?

The benefit is that it's supposed to reward both killing opponent's ships and not losing anything.
And by "not losing anything", I mean, "Regen and point fortress".
It adds more granularity, without having to constantly resort to tie breakers to determine seeding.

Yes. Ships destroyed only would give you a max of 500 in a 5 round tournament, whereas points destroyed+points preserved gives a max of 1000 thru 5 rounds.
In games that went to time three players all destroyed 75 points worth of enemy ships; who actually played the better game? If you're just tracking points killed you can't really tell. Now what if opponents killed 0, 66, and 80 points of those player's squadrons? Now do you have a better picture of how the games actually went? Two games were wins by killing 75 points where one of them was a very lopsided game while the third game was a narrow defeat. Even if you score wins/loses it sure does look like one of those winners should have a clear edge but if you only count points killed they look exactly the same.
MoV is just that MARGIN of victory although the difference in scores each player takes is twice the actual margin. That magnifies the effects of good strong wins which is what you probably should be shooting for. If you're just counting points killed there is no difference between someone curb-stopping an opponent vs. one who wins via scorched earth and barely pulls out wins after sacrificing everything.
It's also a good bit easier to see, and more importantly control, when it comes to a tie breaker as compared to the hypothetical SoS based on all opponent's records.
