Your Favorite Alternate Rules, Scenarios, and Game Types
I want to try a 200 point game where we can use fanmade cards like the ones @Odanan makes, as long as they are balanced.
I love the official missions. My favorite so far is Mission 12: Bounty Hunt (comes in IG-2000 expansion) because it is a three-way and adds a little bit of diplomacy to the game.

My friends and I run with a +50% rule for our games (150 standard, 450 Epic... I know, I know, we'll probably dial it down to 350, but I got outvoted on this). Once we get a few Epic games in, I have a RPG-esque campaign plotted out in my head where both sides (easily modified to accommodate all 3 factions) are fighting over an abandoned Nebulon-B with branching story/missions depending on who wins.
The Junkyard variant (damage deck replaced with upgrade cards) in a casual furball.
Lengthy, but easily understood, and inventive. Try it before you judge...
Distinct Rule no duplicate ship models, pilot cards, upgrade cards, or unique names.

Mario kart is awesome, kessel run style is also awesome (Mario kart style drag race with large ships only)

Even something like escalation tournament rules are great fun to play with.
I also have fun with @Cubanboy's idea of using 20 asteroids on the table during a match.
There is "only Generics" or "no one above PS 6".
Ground based Terrain -
It's the best!
We roll with the following rule - Treat it like a ship collision, except - you are dealt 1 face up damage card. Not going all the way through one will mean you'll suffer 2 crits, through shields and probably explode if you are a small ship. Huge obstacles cannot be destroyed - Dash rendar pilot is "FAQd - Dash's text should read, regular obstacles - Dash cannot ignore huge obstacles"

The idea I am kicking around is the following,
Place as many asteroids on the table, they are at least 1 range away from each other. Now everyone gets the same ship ether arcs or tie sf (front and back Arc) with a reusable sem torp.
The way this works is if you hit an asteroid your opponent gets a point. If someone blows up an asteroid and your hit they get 2 points.
You play until you get to 20, or play where you lose one hp per rock and 2 per torp.

If you go to the Gencon event page there is a link to the mission packet. I'd link you but I'm on a phone now. Search by shuttle tydirium and you should be able to find it
Standard game but with 150 points. Really opens up the options for either multiple fully loaded aces, or large squadrons of inexpensive ships. Doesn't take significantly more time to play than standard. I personally would like to see standard tournament switch to 150 points, as I think it would open up the field to allowing more of the neglected ships to come back like B wings and T65's.

3 way standard game with the limits being small ships only, and a 66 point cap per player.

The Political Escort mission.
I'm working on an X-wing scale Battle of Scarif 3-part Scenario:
Mission 1: Probe the Shield
Playmats: Custom Scarif playmat (with shield gate) + FFG Starfield playmat
Obstacles: 2 Titanium Series Zeta cargo shuttles and 2 3D proximity mines
Rebel forces:
3D printed Nebulon-B Frigate, GR-75, Ghost, 6 X-wings, 2 Y-wings and a U-wing
Imperial forces:
Titanium Series Krennic shuttle, 8 TIEs and 4 Strikers
Shield Gate with 6 turbolasers (50 total HP)
Sheild Gate spawns Academy Pilot each round
Krennic spawns Academy Pilot each round (ARE WE BLIND?! DEPLOY THE GARRISON!)
Objectives: Rebels - do 50 points of damage to shield gate to go to second mission
Imperials - whittle Rebel forces for later rounds
Mission 2: I Have an Idea
Playmats: Custom scarif playmat + FFG Starfield playmat
Obstacles - Imperial Raider, 2 Zeta shuttle cargo pods (shuttles dumped them and ran at start of battle), wrecked TIE fighter and a wrecked X-wing
Rebel forces: 3D printed CR-12 Thranta Corvette (Hammerhead stand-in)
Imperial forces - 8 TIEs
Objectives: Rebels must dart across the mat and use the "Hammerhead" to physically push the Raider into a laminated ISD token. The CR-12 has a "Lightmaker" title card that allows it to push capital ships.
Imperials must disable or destroy the "Hammerhead"
Mission 3: Hope
Playmats: Custom Scarif mat + FFG Death Star Assault mat (Yavin and Yavin IV will be covered by a laminated Profundity token), destroyed shield gate will be covered by laminated pieces of the destroyed ISDs
Obstacles: Custom designed GR-75 wreck made to look like the one that struck the Devastator in the Rogue One film (this will be placed just off the bow of a laminated ISD token), wrecked TIE fighter and a wrecked X-wing
Rebel forces: Tantive IV + everything that survived Mission 1 with same stats they finished the mission with
Imperial forces: Imperials Raider (Devastator stand-in), Lambda shuttle, 2 TIE shuttles (bombers), 2 Black Squadron TIEs
Objectives: Rebels - Tantive IV must travel across the mat to hyperspace out
Imperials - disable or destroy the Tantive IV
