1: No. You pick one weapon to use when you activate in combat, unless something specifically tells you otherwise (e.g. the BTLA4 title for the Y Wing or the TIE/D title for the TIE Defender).

2. Remember that extra die is just helping you determine if each of the TLT attacks hits or not. You will not increase the TLT's damage potential as your dice will get cancelled after determining the attack's hit/miss result.
