So... am I right in thinking that a Force user with the Ebb/Flow base ability wielding a saber with a Dantari crystal and can choose to make a Flow power check as part of any combat check, thereby potentially healing three strain? (Spend a Force point to heal 1 from the Flow power, then spend another Force point to heal 2 from the Dantari crystal?)

Yes, but why wouldn't you just spend both Force points on the Dantari crystal and heal 4 strain instead? I don't think the Dantari crystal requires you to activate the power that you're using.

Likely because the wording on Dantari Crystal doesn't say one way or the other if it can be used multiple times. So a GM could very well read the crystal's effects as "only able to spend a single FP to recover 2 strain" as opposed to "recover 2 strain per FP spent." It's not a Force power or even a Force talent, so a GM may well decide that it doesn't fall under "can be activated multiple times unless it says otherwise."

Usually FFG add the line "may only be activated once" when they want such a limit... but leaving it open definitely gives the GM room to limit it.

The Manipulate basic power specifically says: "The user may activate this multiple times". The details of the Influence basic power also say this, although the box in the Force tree itself does not. Sooo, definitely inconsistencies.
