EmoSiths - beat it pretty badly. 3 players running EmoSiths yesterday (out of 10 attenting) and including both event and casual games - only 50% win ratio :/
Fixing Poe/Maz
wiley: ePhasma is one of the most difficult deck to build and handle well, but I have met a player who was able to make a competitive match against me. YOu still have to draw your fast hands, thermals and u-wing, but I agree that thermal is an issue and it can destroy the game for you. but in cases when thermal does not drop, you probably win. It has a ton of removal, a solid amount of control over the board and it can produce solid amount of shields and consistently deals 3-5 damage per turn, so you can get down Poe on turn 3.
However, there does not have to be a counter against this deck. It is just solid Tier 1, so if there are decks able to compete with 50% chance against Moe and rest of the field, than the game is ok. There was also no "counter" against Vader Raider in previous meta and people were fine with it. There is one pretty obvoius character countering Poe, which is Kylo Ren. People used to play rVader + eKylo back in Awakenings, which could be worthy even now against Moe, but I have not tried it yet.
I am currently trying to make Luke worthy and it seems, that it can be ridiculous against decks without sufficient removal (where Poe Maz is somehow positioned) but it really struggles against control suites. In uncontrolled turn, the damage output with My Ally is the Force is crazy and when he is coupled with either red for Leadership or Maz for consistency, I like it more than Vader Raider.

Try eLuke/Maz - with force speed, maz and fast hands there is not much control your opponent can employ - have been on the receiving end of that deck.
