And now I kinda want to make a character who believes very firmly he is a force user and has a lightsaber but actually has NO force ability...maybe lots of Presence to convince others to his way of thinking...8D
What was a character-defining piece of gear in one of your games?

He's a Falleen who grew up in isolation and never learned about his species' pheromone ability. He thinks he's mind-tricking people when he roofies them.
My Explorer character fashioned some gear (a pair of holsters, vibroknife sheath, and rifle sling) from the Wampa skin rug that belonged to Trex (from Escape from Mos Shuuta)!
The gungan player in my group and I brainstormed a bit about gungan culture and society, and we decided that the warriors sometimes used macuahuitl swords. So his character, Loko Deeps, had an heirloom macuahuitl passed down to him and ended up smashing many stormtroopers with it.

"NO Officer, these are NOT functioning lightsabers"
*waves hands in face*
"Did you just try to mind-trick me?"
"You don't know what you are talking about officer."
*waves hands in face*
"You ARE trying!"
"Dammit...not again."
*cuts officer in half with lightsaber"
That would happen to my players.
Mandalorian Bounty Hunter - Mandalorian Armor, especially when I could afford to upgrade it to Superior & Cortois.
Anything with Auto-Fire and Jury Rigged, especially if it's modified so far that it wipes out every personal scale opponent in a single attack action. What? I didn't say that I liked it, just that it's been character-defining for the Gunner and Gadgeteer in two of my games.

H-7 Equalizer (ok damage 13 without jury rigged), DR-44-Dragoon Cavalry Blaster, a simple Model 44, just take a BAM module + a Galven Patern Resequencing Attachment, which takes three hardpoints and gives a blaster pistole fully modded +6 damage and +4 pierce. Comes with the disadvantage of being inaccurate and adding automatically two threads to each roll, but the stopping power is fantastic.
If you have tinkerer on top you might add a silencer or superior on top of that or even more damage via OVERCHARGED ACTUATING MODULE, which adds 2 damage for one HP. Plenty of options for heavy blasters with stopping power, you could on top add 1 damage via jurry rigged iirc, which would make sense for this special kind of anti-armor blaster.
edit:
Though this special example sounds like special crafted weapons, duelling pistols come already with plenty of firepower, but usually are single shooters instead of 6 shooter, use them as template, increase the limited ammo via crafting and you are good to go for some amazing high damage pistoles with consume every now and then a maneuver for reloading.
Aye what he said. Originally I wanted a cool object with limited ammo, yet high power to compensate. I had set my character's story out much like a western, he had a galaxy to take revenge on and only a six shooter with which to do it with. Nowadays, given that he's been serving the alliance for several years and had committed several high scale heists to fund the squads operations, the fact that he has so many different types of gun and armour is probably his most character defining trait. Tobin Stryder is has a:
Sneaking suit (Mountaineering armour with optical camo and a strain enhancement system.)
A full battle suit (Segmented armour with integrated holsters, mounted rockets, several optical and strength enhancements.)
Two lightsabers (One that he took from the first inquisitor he killed, the second after his son was almost kidnapped by an inquisitor. He basically took a rare gemstone and Manipulated it into a true Kyber Crystal, the only sympathetic lightsaber crystal in this galaxy and put together a saber spear named "Brutal Justice", a flexiwhip spear based on Rodian hunting weapons.)
Loads of guns, from his dueling pistol, dragoon, various micro launchers, a stripped down 38, a grenade launcher he stole from IG-88 and more.
If I had an apt comparison that he is more of a iron man crossed with Star Lord with the punishers obsession with revenge. The empire has ruined his life and he's more or less commited to destorying the empire and every darkside user. Fun stuff. XD

Oh in that case I want to change my answer to "my astromech gunner AND quad-laser cannons". Our favorite way to end a lightsaber duel on Korriban. "Reflect this *******. Fire!" *grin*
The general theme of my character is to find ways how to bring a ship into the encounter. We burn ship IDs like crazy. ;-)
Lookout: Saboteur/Demolitionist droid. Favourite item: Detonite. There is no door, person, or obstacle that 2-4 of these things strapped together cannot overcome.
Wade Hanlon: Gunslinger/Force Sensitive Exile. Favourite item/attachment: Integrated Ascension Gear. This thing has saved my butt countless times. Need to prevent enemy from running away? PC needs to run away or bring something closer? PC needs to get to the top of an imperial walker with a damaged windscreen so they can lob a grenade into the cockpit? The answer is always Integrated Ascension Gear. It's the best 350cr I've spent. It's basically a 1 hard point attachment that offers the effects of Force Move and Leap combined.

For the record this si really cool, nice flavorful addition to the game. And now I may have to introduce a Vibro/Chain equivalent in my upcoming game....8D
We are only 3 games into the EotE campaign we are playing, but I am hoping my Kyuzo Assassin's War Shield will become his defining kit. Especially after seeing Wonder Woman.
I plan on leaping all around the place using his shield. I am hoping to modify it to reduce the number of Advantages needed for it to return back. I am also going to cross spec into Infiltrator for some extra Melee bang for back.
The trenchcoat. It easily conceals all, and with Utility BeltTM literally has everything you need.
