It's one per maneuver right? So, a person could theoretically spend themself and use like 10 white fortune dice? Yes/No?

You can't assist multiple times on the same action, only multiple people can assist on the same action, so the total is limited to 1 fortune per person assisting
The way I run it is that you can only assist any single person once per turn. One person can assist multiple allies, and one person can benefit from assists from more than one ally, but a single person cannot assist any single ally more than once per turn.

With all due respect, Assisting is a Roleplayed manoeuver, not an auto-videogame-give-me-one-dice-more-everytime-thing... At least let players describe HOW they assist EVERYBODY around.
Concerning number of assist... This is a manoeuver, so I think there's only a fatigue limit because at your turn you might realize one free manoeuver, and more at a cost of one fatigue per extra manoeuver.

I don't even allow assists in combat. But if people use a maneuvre they can defensively assist another player so they may use their reactive defence cards for attacks against that player, if they are engaged with the same target.

in D&D and OGL RPG yes. Maybe I didn't understand, but I seemed the characters assisted everybody around...
My players doesn't like the "auto-math-assist" concept on attacks. being 2vs1 when flanking is enough "assistance" for them.
Gallow's solution is quite good in defense.
Eh, I don't find the need to limit the players that way. Plus, it makes for a good scene when an enemy (or player) gets surrounded, especially if there are allies to call to for help.
If you are worried that it's just a mechanical bonus with no RP value, then that is a Player issue, not a system one.

Sometimes we are joking about PCs tactics... It seems they are mostly a bunch of cowards who only strike when overwhelming their adversaries... finally the overboss is striked down by a gang of losers. Who's the hero then ?...
Plus nobody cares for the henchmen families.... 
You could not allow assists for combat maneouvers and still give fortune dice as an advantage for outnumbering their opponents as suggested in the WFRP rulebook on page 60. Give players one fortune die for two against one and if you are super generous give two dice for three against one (but I think this would help henchman monsters more than your players). or come up with whatever you like. Save assist for when you have two characters with First Aid, or when it can be roleplayed as already suggested. If characters are only taking actions that are gauranteed to succeed (or at least with the odds stacked in their favor) out of cowardice I think that is great if they are truly afraid of character death. that is warhammer-they should be.

Yeah, I only give the die if they spend the maneuver. I don't hand out a freebie if you just show up. To each, his own, though.
