I'm looking at buying my first expanation. If I jumped straight to Jabba's Realm would I spoil the others?

Nope. Outside of needing the Core Set materials, every expansion (big or small box) is stand alone.
Jabbas Realm you definitely get a lot of cool stuff.

To emphasize by repeating: You need the core set.
All boxed expansions require the core set, but do not expect any other expansions.
Figure expansions require the associated boxed expansion. Some figure packs are "reinforcement waves", and require only the core set. (Except the Bantha Rider, which requires Twin Shadows.)

So I need both Jabbas Realm and the Jabba expansion to play Jabba?
To make the most of the Jabba's villain pack you need Jabba's Realm.
You only need Jabba pack to play Jabba in friendly casual skirmish. (Or use the Jabba token from Jabba's Realm.)
You need Jabba's Realm tiles or the playmat to play in official skirmish tournaments (unless the organizer makes exceptions), because Jabba's map is in rotation.
You need Jabba's Realm tiles for the agenda side mission (campaign) on Jabba's pack.
You cannot earn Jabba as a villain in the Jabba's Realm campaign, but the heroes encounter Jabba during the campaign.

Doesn't really matter, that's just establishing the timeline.
In fact, there are some possible Bespin missions included in Return to Hoth- they just don't use the Bespin Gambit tiles.

Yeah, what subtrendy said above. You dont physically need Bespin or Han Solo for anything in Hoth.
