What do you guys think is the best team in Star Wars: Destiny. I'm trying to figure out if there are any teams I want to try out.

Han/Rey is a good pairing for players with an advanced understanding of the game. That's not to say beginners can't play it. It offers players a chance to play a deck with a more complex learning curve.
Qui Gon/Rey or Rey/2x Padawan are both good intermediate decks that can be pretty competitive and offer some tough decisions without overwhelming new players with choices.
Jango/Veers is a good beginners deck. When Destiny first released it was the deck to beat and played by players of every level of experience. Now that people have figured out how to play against it you don't see it as much at tournaments. None the less it has an easy learning curve and offers new players a reasonable chance of success while still learning the intricacies of Destiny.
Generally speaking there is an abundance of playable pairings limited mainly by what type of deck you like to play and if you have any faction preferences.

I won't pretend to know what mill is supposed to do, but the nastiest mill deck I ever faced was a Dooku/Jabba deck with every possible dice control card in there.
"Defensive"-style decks still have to be relatively aggressive, due to the speed at which this game moves. You need lots of ways to remove an opponent's dice, so most of these have access to yellow cards (like Electroshock) and roll your dice out there pretty fast (have good action economy). Defensive play strategies are pretty limited to yellow heroes right now, with the combo of Second Chance, Ammo Belt, Rebel, and Starship Graveyard. So, yeah, like @Starbane said, Han/Rey is kind of the champion here!
"Aggressive" is what most decks need to be, really, to survive the current meta. Jango/Veers was definitely the champion of this category, but we'll see if there's a new SoR option that takes over. FN-2199 is one of the cheapest, most aggressive characters out there! We'll see if FN-2199/Jango or FN-2199 with somebody else takes over.
The one deck that seems to not fit these molds (maybe it's aggressive?) is Vader/Raider. That deck has several threads on the forum discussing it right now, and I think it's probably the dominant deck (it's also what won the world championship!) in the current meta. So, yeah, short answer (if you don't feel like reading this whole post), Vader/Raider is probably the best.
Tomorrow I'm going to be trying out a Palp/Royal Guard. Thought I'd be thematic for the fun of it being first local tourney for SOR, but between my pulls and a couple single buys I got most characters and I can't wait to try some new ones. I know Epalp is considered extremely effective at this point, and I'm curious to see what a single does. Outside of the store owner each of us regulars got a single box, so some fun should be had.

Personally I've started playing EJyn/Ackbar and I've had a great time with it. Plenty of hand control while getting in extra damage with Ackbar. Also yellow at this point seems to have some of the best die mitigation. So it helps keep my opponents damage at bay.
