I have this 100 point rebel list put together that looks interesting. But I normally fly imperial or scum. How would I start an approach with this build. And what strategy do I use for xwings, as I've never flown them?

That Red Ace build is durable, but it helps to pair an attrition-sponge with something that hits harder. Blue Ace is really underwhelming in most respects. Jess Pava is one of the best punch-for-points options in the Rebel lineup. Change RecSpec to Jyn Erso so your U-wing can load Red Ace with tokens, leaving Red Ace free to Target Lock. With points saved, you could put Tactical Jammer on the U-wing and fly it in front of the T-70's. It should be reasonably efficient for a Rebel jousting list.

As jmswood pointed out, the ships you put together are best at jousting, with the exception of blue ace. The issue with blue ace is his lack of action economy once he does his thing. You could spice it up with the EPT droid and ptl on blue ace and replace the u wing with ahsoka fully loaded.
