A ship that "clicks" with you.
I have to say X-Wings, K-Wings and ARC-170's all really click with me, still trying to figure out some fun load outs for the K-Wings and ARC's. I also love Ghost, but haven't even tried her out yet.....
TIE Striker for me, from the moment I got my hands on it I loved how it moves and effective it is. My current favourite experiementaly list is 3x TIE Strikers & a TIE Bomber (with TIE Shuttle Title) for support.
For me it's the Starviper - With Guri, I can normally get in in just the right position to use his ability and keep him out of Arc leaving the defender open to attack from everyone else.
For fluff the T-65, for game play the T-70. I love talon rolls and boosts.
The closest one to "clicked" for me is the Shadowcaster, specifically Ketsu. It didn't take me too long to grasp setting up her ability to max effectiveness and I've had the most success flying her.
VCX-100 for sure.
I call it "Mr. Potatohead". It's just this big ol' chunk of a ship, but you can start slapping turrets, systems, 2 crew, and mods all over it to give it some personality. Then you can put the phantom in the back or even fart torpedoes!
There's just so many ways to build it and fly it that I'll never get bored.
IG-88. Sure, it's not on top of the meta right now and can sometimes feel like an uphill battle. If you fly it well, however, and get where you need to be then these guys can ruin anyone's day.
For Scum, the Protectorate fit me like a glove. Dice rolling could be better, but I can fly the smack out of it.
I very much like TIE Striker/Duchess, though my last outing was a disaster trying to remember whether I was going to use AA or not and ended up on an asteroid! I also really like the Countess with a TIE/D Defender.
I've not flown enough Rebel ships to get a handle on which one works for me. I really want to give The Black One a workout.
I also really like the humble Tie Fighter. I played at Wave 1 and loved them. I really can't stand formation flying, though. I fly them loose and love blocking. It can be a single ship out there or a net of Tie Fighters that will cause you to bump them no matter where you go. This then sets you back to the front and actionless in front of all of them. I love the 1 hard turn to get in on a flank and throw in that 3 red dice, which is unexpected. I love the named guys that add so much to them, like Dark Curse, Backstabber, and Night Beast. Super cheap for good PS. I also usually like a heavy hitter with them.
I also like Tie Bombers. I had to practice, practice, and practice them quite a bit to really get them. It was hard at first, but I just had so much practice, I really like them now. With their dial and a Barrel Roll, I feel like I can get almost anywhere I want. So many people say they have a bad dial and I just don't see it. 5 K-turn is fantastic and usually better than a red 2 hard turn. I recall playing a 4 x Bomber list vs. a tournament guy with a bunch of A-wings. It came down to 2 Bombers (only one with a missile left) and his ace A-wing. We danced around the table for a long time, but I finally caused a bump and hit him with the missile. *boom* Plus....bombs are fun!
TIE interceptors. Not the elite aces, mind you; I'm talking about the base, generic ships. They're fast enough for you. Seriously, the option of boost OR barrel roll, backed up by 3 dice is just magic. I've flown a the top aces a lot, too, and they are a blast! But getting 4-5 on the table is a completely different, yet rewarding feeling.
TIE strikers get honorable mention. I've only played 3 games with 5x Scarif Defenders, but I haven't lost yet. They are so exciting and entertaining to fly because of all those crazy maneuver options. Love it!
EDIT: Lt. Lorrir reminded me to put in a good word for him. He and I go way back, and I'll never forget the time I predicted Wedge's maneuver, and pulled that fancy barrel roll to where he had no shot after his maneuver, but Lorrir had range 1 and disintegrated him. Love that pilot!

Interceptors, specifically Soontir Fel, and Lambdas. I LOVE flying Soontir and have had some success flying him plus 3 Lambdas (each with a Tractor Beam). Lovely shenanigans with that lot.
Strikers as well. I think my favorite thing about X-wing is the movement and positioning (and repositioning lol) aspect of the game. Which is also why I love me some JM5Ks too (Dengar/Bossk is a longtime fav)
K wing...Arc...Dash...Biggs...Luke...used to love Xizor when scum first ca,e out but haven't played him much since.

Have you tried 5 Omegas with Crack and Weapons Guidance? You don't need Howlrunner so you don't have to fly in formation and their dials are so good. It's a lot of fun!
My first love is the good old TIE Interceptor. Last week I picked up Corran Horn for the first time, gave him Advanced Sensors and PTL and...who is Soontir Fel, again?

Vader in his TIE Adv. Love the ship even if its considered less competitive
TIE Fighter. I try out the new hotness with every wave, but I always come back to my basic TIEs.
The Sloop Title Millennium Falcon. I started out playing Imps with Phantoms and Defenders being my favorite but I made the least mistakes with Sloopy Rey. It was also my first Falcon, I had to get original one afterwards to get EU.
It just flowed.

I want it to be the TIE Interceptor, but I just can't get it to fly As Advertised.
So it must be the TAP; flies like a Squint, had some extra survivability for Epic play, and is a hoot when prockets dishes 5 dice of hurt.
For repaints, it's the Firespray. I could redo the livery on that ship 100 ways.
The scum Z95. they're better then their lack of top table outings suggest.
First one for me was the Interceptor with PTL, as I grokked the power of double-repositioning very early on after release. (There's a *.vlog floating around with me using it to good effect in the first-ever VASSAL tournament, I think.) Shortly thereafter came AdvS B-wings, and again it came pretty easily. (I love AdvS, as it's a card that starts out good, even if only using it as a novice does, and it just opens up wider and wider as skill increases.) I carried that into AdvS Brobots. Finally, I've combined the two things (pre-movement actions with double-repositioning) in my love of Ballet Norra. (I was also very good with Echo, back in the day, but honestly, if you could afford rocking yourself, pre-PS-wars Echo could make anybody look good.)
Looking back over this, it's not so much "ships" that seem to click with me, but rather certain ship-card-concept combinations.
