I know in the rules it says you can use multiple banes on an enemy at once. Does that include multiples of the same type? Can I spend multiple blights to completely remove all of an opponents dice?

That's correct. You can, and you should. It's great fun.

And remember dice are added before they are removed, so when flanked don't forget to spend an extra blight.
