Immune Character's Ability

Immune is a big problem for me, If somebody immune another character's ability.

For example, Robb Stark(S8) after he win a military challenge in which robb stark participates, choose and kill a character controlled by the losing player. If his oppoent have an character who can immune character's ability (EX: Renly Baratheon B73), Robb Stark can not select and kill Renly Baratheon, is right?

And same postion, Ser Ilyn Payne(L41) can not kneel himself to kill Renly Baratheon in Marshalling Phase, is right?

Correct.

Immunity boils down to this: if a card is immune to X, then:

1. X cannot "choose" that immune card as a target

2. Any direct effects of X on that immune card, targeted or not, are ignored

What about keywords?

Can someone use stealth on a character with immunity? (eg: on Renly)

and what if military battle plot in on and Turncloak Mercenaries is attaking....could any character (with immunity to character's ability) be declare as defender ?

No. While Turncloak Mercenaries is attacking, players with revealed Military Battle or Power Struggle plot cards cannot declare defenders.

Correct. Because Turncloak Mercenaries specifically restricts what players can do, character immunity is no help.

Compare that to something like King Balon, who says "If Balon Greyjoy is the only King character in play, characters with lower STR than his cannot be declared as defenders while he is attacking." In that, the restriction is being placed on which characters are eligible to be declared, not directly on what players are allowed to do. So defending characters who are immune to character abilities can defend when Balon is attacking no matter what their STR is.
