Can you use fleet footed after someone plays on the lam before the attack resolves aka misses

If your question is "can I use FF to void OtL" then based on the wording of FF I'd say no. The trigger is "during your activation". So you can gain 1 MP between performing actions, but not while in the middle of it (the attack has not yet been fully resolved, we're still in the middle of an unresolved action)

What if someone uses "On the Lam" during an attack and then takes damage while moving, from say "parting blow" and then I play "Opportunistic"? Would I move from "opportunistic" and then my opponent finishes their "on the lam" move and then the attack finishes? Or is the attack over by that point?

Parting Blow is performing an attack as an interrupt, Opportunistic gives movement points (if to the attacker, usually that's during its activation and they go into the movement point pool - if outside of the figure's activation for example under Executive Order, they are spent as an interrupt), then the original attack continues if the target is still in line of sight.

It all depends if it's the attackers activation or not.

majority of the time it will be the attackers activation, therefore the movement points go into your pool.

one way it would work is if Jabba was making the unit attack, but, you'd have to move before they finished their movement, so--- not sure how helpful that would be.

What if you played opportunistic during greedo's parting shot? Could he move before he died? Does it make a difference if it was his activation when parting shot triggered?

During your activation, movement points received from other than special actions go to your movement point pool. When performing the attack from Parting Shot during his activation, Greedo could not spend movement points from the pool before being defeated.
