Not played much of this game but something occurred to me. Instead of having fighters flying alongside capital ships when beginning the game, could you not have them launch with a fighter activation on the command disc?

That upgrade card is called Rapid Launch Bay.
Effectively, the game simulates you launching when enemy is detected - so they are ready to engage.
There is an upgrade card that simulates what you want.
How it works in the nitty gritty is debatable

But in a more lore way of answering, the fighters rarely are dropped by the ships. In all fights they all come of out hyperspace as a fully deployed fleet, such as in Rogue One and ROTJ

Only if you're a Rebel.
Because TIEs are constantly shown to be launched by the Empire.... as in Rogue One.

and if I remember correctly, Han said in Episode 4 when he sees a Tie Fighter that the ship has no hyperdrive capability

Not exactly.
It's stated to be a short range fighter, incapable of getting there on its own. Could have been part of a convoy etc. So the lack of a hyperdrive is implied.
And its Obi Wan who states "No, its a Short Range Fighter."
And then Luke who guesses it must have "gotten lost - been part of a Convoy."

TIEs are designed to have the minimum required of everything, concentrating only on maneuverability and speed. Therefor the TIEs don't have hyperdrives (in EU Avengers were the first ones to get one, not counting a few experimental TIEs) . They don't have life support system either, that's why the pilots wear full suits and a closed helmet. They have no shields and not proper armor plating either. Truly a horrible way to fly into a fight.
One more lore thing: Due the anonymity of the Empire it was a paradigm that no TIE pilot may fly the same craft twice, crafts had to be rotated among fighter pilots. Only elite squadrons were exceptions.
Yep, for the new or uninformed, in Armada so far for the Empire, only TIE Advanced, Phantoms, and Defenders are the only fighters that have hyperdrives.

Didn't help me too much in the old X-WIng PC game. Pretty much always got captured after auto-ejecting.
But in TIE fighter......then it was useful.

Yup, so when you see one, run. There's definitely more of them, and their mothership, around.
(Spoiler: I was quite amused by the battlefront VR scenario when vigilant jumped in only to be rekt by the mothership ISD)
