A book that covers alternative Force disciplines. The Nightsisters, The Shapers of Kro Var. Maybe even a section to cover the concept of "Grey Jedi.
A starship book comes to mind. Aside from having a lot of ship profiles, it'd also cover what's involved with owning and operating a star ship, what opportunities it opens up, starship-centric adventure hooks, and so forth.
My group's currently investigating a ship we've been given, and it's got a colorful (read: very obvious illegal) history, and we're figuring out what we want to do with it, and I'm pretty concerned with laundering it, which means I'll probably be having an out-of-session discussion about the bureaucracy involved in registering a "salvaged" ship used by rebel jedi scum or whoever had it earlier.

Following on Darcune's thought, yeah, I'd also like more options for Force traditions to explore. I'm not as into Jedi as I was as a kid, and I'd enjoy having other directions I could take a Force-sensitive than the Jedi/Sith dichotomy.

So while it is talking about using mentors, it would have to first describe the tradition. At least it would hopefully do that. Enough to build a PC around it.
It might be interesting to see an entire source book devoted to just one world or location. Reasonably fleshed out with NPC's, animals (monsters), locations, events and a mini adventure path.
Given that it's Edge of the Empire, Nar Shadda might be the obvious choice, or maybe Tatooine since Nar Shadda's already been covered.

Coruscant is the obvious 1 world 1 book candidate.
New worlds would be awesome, Weik is fantastic.

The vehicle rules are fine. Every time i see someone complain about the vehicle rules i also see them not using the rules right. For example exceeding hull threshold does not mean the ship explodes.
A low cost booklet on a single world with a unifying theme is something that I really think could work. It has for Paizo.
It offers a boost to a GM looking for something that fits his campaign, is looking for new and interesting locations for his players to tour. And if you keep it low cost enough, it's not a major purchase the way a full sized book like the Lords of Nalhutta might be.
This world is a frontier world of mostly scrublands and low technology where gunslingers make their own justice. AKA western world.
This is a relatively advanced inner rim world rife with corruptions where various criminal syndicates are in the middle of a shadow war to control the lucrative X industry. AKA crime wars world.
This world was barely inhabited until some very interesting ruins were found in the deep jungles, and now it's experiencing a boom of explorers, treasure hunters, and archaeologiest who are scouring the planet for the next big find. AKA Indiana Jones world.
This world is a high tech mecca where vehicles and starships are developed and holds some of the more prestigious races of various forms are held. AKA fast and furious world.
This world is on the fringe of the corporate sector, and while it was originally the location of a major battle, in the years since it's become a mercenary gathering ground. "Friendly" competitions allow the mercs to show off their skills and employers can vet multiple possiblities in one go. Just beware, the question "you and what army" might not get the results you think. AKA Planet Mercenary.
Politicos and backstabbing families with heavily stratified classes? Noble/politico world.
Etc etc.

But more seriously, I'd love to see a book of adventures for each line, of around 256 pages. For example thirty-two 8 page adventures or sixteen 16 page adventures or eight 32 page adventures. Not linked but definitely at a variety of challenge levels, so GMs can mix and match.

That would be about the only thing which isnt a problem with those rules.

Any reason why that particular page count? seems kind of arbitrary to do 8-bits worth of pages...

Coruscant, Nar Shadaa maybe even Taris would be interesting for the topic of a single book. Coruscant itself has many, many layers, so I could see it. It could also provide them with an opportunity to pack in some additional races that they haven't already.
Right now my campaign is steering towards Kashyyyk, so that makes me want to see a book on Kashyyyk and Dosha. It could even tap into the history the of Wookiees and Trandoshans at each others throats.
I'm also interested in one of the new worlds from the Battlefront sequel called Vardos (sp?). It's supposed to be an Imperial utopia... That could make for some interesting stories. Maybe they'll save that for an Empire conversion book.
Some things I would like to see with cheesy names (going upon what we already have): Hives of Scum and Villainy , an Arkanis Sector sourcebook with a special focus on Tatooine (probably one of the more iconic worlds in the Star Wars mythos) and Geonosis. Towers of Civilisation , a sourcebook focused on the ancient worlds in the core, like Coruscant, Koros, Foerost, Hosnian Prime (I really hate TFA but I suppose it is canon now) etc. The Shroud of the Dark Side , a Stygian Caldera sourcebook, focused on the worlds of the ancient sith; Korriban/Moraband, Ziost, the Drumond System, etc. Machines of War , a book dedicated purely to vehicles and starships on both sides of the galactic civil war and some book on the Greater Javin region (no idea what I would call it) - Greater Javin includes some major worlds like Hoth, Bespin, Anoat and Javin itself.
And if FFG really loved me a book on worlds visited in KotOR I and II
Corperate Sector and Mandalorian space books. Plus maybe a Zann Consortium book hopefully with an updated statblock for the Interceptor-IVs because the stats in Mask of the Pirate Queen were horrible. Imperial Loyalist World and vassal state books would be fun as would a neutral, either truely or just offically, worlds book.
