So many! What type of character interests you? Face? Combat? Know it all? Mec/Doc? Pilot? Sneak?
I like Twi'Leks with a decent Cunning, Willpower and Presence. If you also bump their Agility they make great Racers or Hotshots.
I like Colonist Driver for a mechanic/pilot, it's got a lot of great Piloting talents with nice mechanics and vehicle fixing talents too. An interesting species for it is Neimoidian
Neimoidian also make interesting Marshals too.
Whipid Marshal Artist, or Selonian? Both have some awesome natural Brawl weapons.
One of the 4 armed, free maneuver species and Agitator. Max out Willpower/Coercion and Supreme Scathing Tirade them x3 a round.
Droid Scientist/Droid Tech who uses his hidden storage talent to hide is minibots inside himself.
A Verpine Demolitions who builds specialty bombs that he can set off with his special verpine radiowaves.
A Xexto Racer who uses Enhance Forceleap, Improved Freerunning and his free maneuver to be the undercity's best courier.
Mechanically its kinda easy to cross reference the obvious specs certain species synergize well with, but I'm looking also at what would tell a good story (without totally ignoring mechanical issues).

I've always liked the idea of an Ewok Hired Gun Demolitionist running around with a bunch of frag grenades. Just a thought.
