Engaged and playing assets

If I'm engaged with a ghoul and decide to play machete from my hand by paying the required resource cost, I would be attacked...right? But I could play machete and only use the fight symbols on the card to improve my combat skill for the fight (and machete is discarded afterwards.)

Is this correct?

Also, if as an another example use ALL 3 actions to say draw 3 cards would I be attached once or 3 times.

This is correct except that when you use icons from the card to boost your skill value you're not "playing" it. You commit that card to the test. Using the correct terminology may help avoid the confusion.

The downside of committing the Machete to the test is that it then gets discarded and you no longer have it available in your hand to play as an asset later.

Yes. Any Action you take that is not Fight, Evade, Parlay, or Resign, causes an Attack of Opportunity, each time.

Just to add, playing cards with the Fast keyword (like switchblade) would not trigger an AoO

Yes, if it is fast - it is not an action therefore does not trigger an attack of opportunity
