Any advice on what the game can be played on, we are playing directly on the wooden tabletop at the moment but the dice go flying all over at times, is there any kind of play mat or something people can recommend (im in the UK).

Not sure about a surface to play on, (we use my dining room table), but, you can use one of the box lids to stop dice flying all over. For other games, (xwing and Armada), I built a 3'x3' surface out of plywood and some fabric. Quite inexpensive to make.

I often play while my kid's asleep, so to reduce dice noise/bouncing all over we usually roll on a spare map tile. If you have the Twin Shadows expansion the cantina/star destroyer bridge tile is huge and works really well for this.
Ugh, my brother and sister are champions of the dice throwing Olympics. No matter how often I tell them, they somehow manage to drop at least one die on the floor on almost every throw, so I know the struggle.
Have you tried a dice tower, or even just making a shaker out of a cup? It's a pretty good solution- just shake the cup, turn it upsidedown on the table, and life it up. Far from as quiet as ManateeX's solution, so it won't work to keep your kids asleep.

My wife who has taken to IA superbly is a contender too....especially if 'aiming at one of those lovingly painted figures' is one of the events....
Cant be too harsh, amazed she plays it at all...but I cringe when those dice go flying.
Surface to play on or surface to roll dice on?
You can purchase a dice tray, or if you're feeling crafty, you can make your own: find, make or buy a shallow box with walls that are roughly 2 inches/5 cm deep. Then line the inner wall and floor of the box with felt from the craft store. Regular white glue should be enough to hold it on. The expansion boxes are a little large for my tastes (Bespin, Twin Shadows, Hoth, Jabba's Realm) but they would work well. Plus they they'll be pulling double duty for dice rolling & storage.
If you are looking for a surface to lay your maps on, you can use those drawer liners that they sell at hardware or home goods section in large box stores. You know, they come in a roll and are made of some kind of foam rubber (not quite a yoga mat, but similar). They come in various colors & widths and they'll keep your maps from sliding around, as well as keep the dice rolling noises down if you're not into using a dice tray.
Well good gaming tables have a felt top to stop things from moving about. You could get a game mat that fits your table. Yeah, any box will do for dice throwing though there are many options to waste your money on out there.
We use this poker table top. It just sits on a foldable Costco table. Works for Descent/Imperial Assault...anything really.
For dice rolling, I finally bit on a Wyrmwood dice system at PAX East this year. I'd been eyeballing one for what feels like forever and I ain't got no kids, so... whatever!
If I had my druthers, I'd get one of those preposterous gaming tables from Geek Chic, Geeknson, boardgametables, rathskellers, etc.
Enough of my clique plays X-Wing, so we normally set up tiles on one of the playmats, which helps with dice scattering, too.
That said, one night we played on some cheap vinyl from The Home Depot and everyone's rolls were insane the entire night, so maybe I'm overthinking it.

When I was growing up my grandmother had a full bar in her house, to include to dice cups with 5 d6 for bar games. When I started role playing and tabletop games when I was a teenager, and still today, I use a nice leather dice cup.
