A bit confused about the term "roll"

Let's say a Gozanti takes the Reinforce action (fore), allowing the 'ship to add 1 evade to its defense dice roll...except it has Agility 0 (zero), so it doesn't roll any defense dice. Sure, it'll roll one if an attack is obstructed, but other than that I'm not seeing Reinforce action having any benefit. I've read the rules for combat, oh, I don't know...ten times? It clearly indicates I add 1 evade to rolled results.

Am I interpreting this correctly?

You're thinking too hard about this. Adding a result is dice modification. It happens in a separate step of the timing chart regardless of the number of dice rolled, including zero. During the modify dice step you have 0 results. Reinforce adds 1. 0+1=1

Any time you're being attacked you'll have a chance to roll. If your agility is 0, you roll 0 defense dice and hope for the best :D

If something asks you to "roll" something you would still do that even if you have zero of that something to roll. Although it is often lost on people there is often a big difference between have zero in something and not having that something (the -nil- result) at all. There are also things in this game where you can't have fewer than zero something but you may need to track the "negative dice" while applying other things to that something.

With so much else triggering on the criticality of wording, "roll" is the odd duck out? Weird.

No, it's just that, in X-Wing, "rolling 0 dice" is still a roll.

Similarly, you can spend a focus to change 0 eye results (eg: for Garven), or spend a stress to change 0 eye results (Keyan), etc.

X-Wing does not shy away from zero magnitude things. And it's pretty strict about making you do the things it makes you do.

Game: Time to roll defense dice.

You: The formula that tells me how many defense dice to roll produces zero, so we just move on, right?

Game: Did I stutter?

You: No, but....

Game: DID. I. STUTTER.

Rolling zero dice is a great opportunity to take out your frustration. Maybe you normally roll politely on the table but in this case throw caution, and maybe even the dice, to the wind. Chuck your roll as hard as you can in any direction and maybe even directly at your opponent; just be warned that it could be considered unsportsmanlike to hurl your roll at your opponent even if it doesn't cause him/her any harm.

Fixed that for you.

And the joke is if the game tells you to roll 0 dice, you roll 0 dice. It doesn't matter that there are no physical dice to roll, but it does matter that some things trigger off rolling dice, even 0 dice.

And remember, if it's Lt. Blount is rolling those 0 dice, it'll still hit and you'll likely be popped for the unsportsmanlike.

Well at least if you are at range 3 and are behind an obstacle you would get to roll a couple green dice!
