Generally: as far as I know they haven't explicitly given it lightsaber stats in the adventure book, but sure, why not. Its a special crystal. Special crystals can be used as lightsaber crystal, as long as the GM approves.

It is worth stating that it is neither confirmed or denied; the adventure doesn't specify any stats and states some reasonable uses for it other then it's intended purpose. Just that a crystal is just one of the things.
Ultimately though what the adventure states isn't important. Any GM should be able to adopt the material from the adventures to their tastes, thus what the adventure states mightn't be relevant at all.
Spoiler: given there is a Jedi there to steal the gem to use in her own lightsaber, I think it's implied that it can at least be attempted to use as a crystal.
Eh, with a good enough story behind it, with a good enough roll and a willing GM, anything could be made into a lightsaber crystal. Rocky Candy could be - and is exceptionally tasty, to boot!
Yes the gem can be used as a lightsaber crystal, as that is specified in the story. What is not specified are any stats as this was before Force and Destiny came out along with variable crystals for sabers.
At the very least, it'd count as the basic stats crystal, but as it is meant to be a special gem, it could possibly have the stats of one of the more interesting crystals available.

Lol. Yes I am the GM. I only had time for a quick glance through before i had to go to work. I just saw there was a lack of stats but a Jedi was in the story. So i just wanted to ask.
There is a precedent for using corusca gems as lightsaber crystals in the EU novels. Jacen Solo's first lightsaber had one.

Maybe using it as a lightsaber crystal involves extensive meditation to find just the right shatterpoint, and then hitting it just right so the surrounds of the crystal shatter and you're left with a lightsaber crystal sized core.
Seems a bit more flavourful than just cutting it down.
If you consider the intro adventures for Force and Destiny, the "Hidden Depths" adventure on Phemis (it comes with the GM screen i think) has the jedi looking for crystals for their sabers.
When they reach the chamber, they meditate with the force and extract a small fragment from the gem formations, so i guess the same would be true here.
Only part of the gem is used for the saber and just because the gem is huge does not mean the entire gem is force focused (so while the Jewel of Yavin may be large, it may still only have a single saber powering fragment).
This is all part of the saber construction rules i believe.

I would do one of few things. I would either:
Make it one of the high end crystals; like the Kryate gems detailed in force and destiny or the breach two gem available in the core book. If you have other force and destiny books, then maybe the ghostfire might be approiate, as Yavin is a Tomb of the Sith and the Ghostfire crystal is exceedingly strong and ominous.
Keep in mind if they aim to keep the crystal to themselves would likely mean betrayal of the client asking for it. When that situation came up: *SPOILERS*
When the Jedi stood between us and the door and refused the offer to use another of our crystals, we shot her. Tobin shot her with a stun rifle as the party heavy was reaching for his gun. One thing that my Outlaw values on the rim is honesty; honest mercenaries get jobs and he generally stays loyal until the end of a contract about 95% of the time. Of course, additional complications made this fairly irrelevant. It was also worth noting that from our perspective the Jedi were villainous mind twisters; something she tried on the guy bearing the crystal. Imperial propaganda did work! But needless to say the crystal would have to be pretty special to warrent having a huge obligation depending on how things develop. That and a potential lack of pay.
