When in doubt, always go with the non-AoR version.
Actually I would go with the AoR version. Tractor works on vehicles, ensnare on people. So the tractor option makes more sense in relation to the source material.
You're quite correct, I just wanted to follow the party line of dumping on AoR.

Maybe you could ensnare creatures like Rancors ...

Who says the Snowspeeders are the only versions of these things? Maybe other versions are meant for dealing with ground troops
There have been other vehicles that had minor differences between the EotE and AoR versions, and our group decided that this was because one of them was supposedly a “civilian” version, whereas the other was supposedly “military”.
To be honest, I think it’s just because the FFG developers aren’t perfect and they sometimes screw stuff up, but I figure that’s probably how they’d retcon it anyway.

Sandspeeders from Onslaught at Arda I are modified T-47s that have the harpoon replaced by a real gun.
I tend to go with AoR or, if possible, FaD versions of things, though. They are newer rules, after all.. unless it's covered by the EotE errata, and even then I'm not sure when it's been updated last.
