So I got a Death Star playmat that had severe bubbling. Given the Christmas load on FFG (I assume), I didn't get a replacement until today. Open it up and it's just as bubbled in the same section. Is it just this mat that has these issues?

I seem to recall something about bubbling being prominent due to vertical storing, and it dissipating when stored flat?

I just bought a Bespin mat with the same issue; 1/3 of the mat is bubbled (large bubbles). It's crazy that you just got your replacement. I've put in a replacement request myself as I really do like the colours of the Bespin mat and hopefully I won't encounter the same issue again.
Another LGS has the Hoth mat back in stock, so I might give that a shot since waiting 2-3 months for a replacement would kind of suck. Honestly though, for the cost of these mats ($45 cdn, for some rubber with a laminated image), the quality control should be better - so far all of my other purchases from FF have been great in the that department.

I'm not sure how that would fix things as the mat appears to be comprised of two parts - a rubber base and a thin material with the picture on it that is laminated to the rubber. There is probably no adhesive under the bubbles to re-adhere to the surface of the rubber mat.
