I have a 1 gallon ziolock that is full of all my excess tokens (I keep around 20 of each in case I get an Epic game) that is in a cabinet somewhere.
What to do with all those extra tokens?...
Trashcan.
I have a gallon bag full of mission and excess focus/shield/stress/evade/number tokens and now i just throw them away without even punching them out lol.
I've been using a bag of them for +1/+1 counters when my brother-in-law wants to play Magic: The Gathering. They're in the same bag as the d20 life-counters.

Forge a suit of token mail.

Not only are they a good source of fiber, but they cook up nice and tender in a crock pot.

BWHAHAHA!!! Its funny cause its true. LMAO!!!
Make a scale model of the black tower from Lotr.
Make a deathstar!!! Lol
I just keep them stored away for whenever I lose tokens and need more.
It’ll happen eventually I am sure.

I think they would fry up nicely, maybe with some onions.
You can still afford onions?!!
I keep a spare set (10 each) in my weekly casual bag for anyone who forgets their tokens. Then I have baggies with another 30 or so each if I ever play Epic or something. Now I just recycle the rest.
If someone were appropriately artistically inclined, I bet some pretty cool textured mosaic art could be made from them, possibly even as a trophy or something.
(BTW, I keep every token I've gotten with my 130 or so ships. If I ever piecemeal-sell my collection, I can recreate nearly every expansion exactly.)
