Thankfully, for the Rebellion, it always took the Empire lots of time and resources to build these things, so the Galaxy wasn't littered with them.
Pretty much this. What weapon in the star wars universe has more power than a death star? It'd be like terrorists taking out a nuke plant. Do we attempt to build something better than nukes? No. Nukes are the top of the chain so you work on delivery of payload, planes or rocket platforms, satelite launchs, subs... the list goes on. The empire building a death star again makes perfect sense. What IS getting old is there being some catastrophic design flaw that a single torpedo can completely wreck this planet sized weapon. I mean seriously how many effing times do the rebels need to blow it up before they put some freaking shields around the power core? Poor writing on that front.
