Yeah, just scoop it all up and reroll it.
If in doubt, scoop them all and reroll. in casual games you might use the same rule as a cocked/off the table dice and allow the already-rolled dice to stand, but it should be 100% consistant and cleared beforehand.
If too many/wrong dice full reroll, if a missed die add it in is generally our approach. That way nothing is too much like a free ReRoll
If player rolls 3 D20 by mistake. Demand to see his marching order then give him 30' of rope, a +1 mace and some iron spikes.

If he rolled 2 reds and 2 blues but should have been 2 black and 2 blue, let the blue stand.
If should have been 3 red allow 1 to be added.
If should have been 1 red reroll the red.
Basically what I am saying is if dice is greater than required, reroll. If dice is less then just add.
If wrong replace.
And if your opponent has been a stickler before hand...reroll everything. Afterall no need to be forgiving uf they haven't
