Has anyone compiled a solid number of non-sentient animal life stats and descriptions? I am looking for a wide array of animals to throw at people in wilderness sections of adventures and would like to not do more creation work than needed.

You might want to look into the Creature NPC cards that FFG sells.

Doesn't have descriptions, but you can always use this as a starting point.
