Do any of the adventure modules have a swoop/speeder race? Or any other source by chance?

Taming the Dragon modular encounter in Suns of Fortune is exactly what you are looking for.

Three other modules that have chases on animal back (off the top of my head): Dawn of Definance 1, Elusive modular encounter in No Disintegrations (the WEG one), and the fan made Escape from Smugglers Hold.

Taming the Dragon is good, but The Jewel of Yavin cloud car race is the most comprehensive.
