Wings Over Flanders Fields is just about the best single player flight sim around, unless you don't care for WWI aviation. It has an incredibly well implemented dynamic campaign and around 80 planes. It's using the old Combat Flight Simulator III engine which is pretty **** old by this point, but the flight model and physics check out, and the graphics are surprisingly nice. The western front is very well modeled, and has cool things like the frontlines moving based on the date and being able to see artillery barrages and infantrymen going through no man's land. It definitely airs on the realistic side of operations though, I.E hours of boredom punctuated by 10 minutes of pure terror.
Even if you don't have a taste for combat, I find it pretty fun to cruise around in a scout plane and look at all the little Belgian towns, though I'm not sure that'd justify the ~40 dollar price tag

Not on steam, though Rise of Flight is a similar game that is on steam, and it has superior graphics and flight model, but a drastically less advanced campaign. It is free to play, but all but three planes are dlc, so really the "free to play" is more just "a demo". It has multiplayer if that's your thing.
