Tail gunner says "When attacking from your rear-facing auxiliary firing arc, ... ". The rear facing firing arc on the VCX-100 is classified as a Special firing Arc . So does this mean that Tail Gunner does not function on the VCX?

Exacly that. Same as on Lancer - he got mobile arc.

Aux is aux its a arc that lets you shoot only primary weapon without any restrictions. VCXs rear arc does not satisfy those conditions.

The only ships Tail Gunner presently works on are the ARC and the Firespray.

Since for some reason there isn't a crew slot for the Tie/SF even though it clearly had two people in it in The Force Awakens since that is the ship Poe and Finn use to escape.

There isn't a crew slot in the TIE/SF for the same reason there isn't a crew slot in a Y-Wing, even though somebody's got to be manning that turret, and it's definitely not the pilot. There's a certain minimum crew complement necessary for the ship to have all its printed features. Crew slots are crew above and beyond that minimum, who have time to do additional useful stuff.

Sorry, I forgot to add my sarcasm face as well since I was really just trying to make a funny about "Fluff says it should be like this...." I mean really, just think about the epic ships and how many people would actually be working on those things and they get like what three crew slots and a "team" or two. This really boils down to once again gameplay > fluff.

I've tried to explain this quite a bit. It also doesn't include passengers. IE, a big freighter like the Falcon or a Decimator can have way more people on it than the crew upgrade icons it has. Falcon Crew are sitting in the back seats in the cockpit, doing other stuff than the typical operations, like operating the gun turrets. The ARC has a crew upgrade because it actually has 3 soldiers in it. A pilot, a Tail Gunner, and a Flight Officer (the crew upgrade). The SF only has a pilot and the tail gunner, who has a dedicated job.

So, basically, I wrote a paragraph detailing this because I agree with you. :-D
