when searching for Star Wars deckplans online, I tend to see a vert similar style used, that appears very similar to the Kryat Fang map in EotE.

i found a GIMP tutorial a while back, if I can dig it up, i'll link it
Those look like Chris West maps by the watermark, and I'm pretty sure he uses a lot of tools as that man has some skills. I know asset packs exist out there ( http://thompsonpeters.com/eote/ for example ) and that Mr. West has released some smaller overlays in his kickstarter-funded map packs.
Sadly, I don't think there's quick & easy software to do this. Shuffler or another tile-based mapping program might get you where you close to need to go, but you can't download mad skills.

The reason you're seeing a lot of those out there is because West did deckplan layouts for the starships in Wizards of the Coast's Star Wars Saga edition.

ahh, that explains a hell of a lot... I just assume it was some kind of standardized software.

thanks for those - so I have gubbins and furnishings, are there any 'undressed' ship layouts?
Although, I suppose if I have a ventral image, I can do corridors and rooms and stuff over that like the above. Cheers.

You might have some luck at Colonial Chrome for unadorned deckplans and whatnot.
edit: my bad, it's all ventral images, but that seems to suit you just fine!
