I believe the text was red for Revenge of the Jedi, at least in the teaser trailer that got shown way back in the day.
Also much of the text for Return of the Jedi was red on the old Kenner toy sets. If you're looking for a symbolic link through coloring, I'd say this is a safe bet. It'll be one of only two movies that reference Jedi directly in the title.

There are similar reports of Jedi being plural when translated to various foreign languages. There is much speculation on this on a thread around here somewhere.
It seems that JJ Abrams has been impressed by Mark Hamill's work in this film.

I'll take it with a grain of salt, but this seems like a good indicator regarding the quality of this film.

Very curious to see if this is a function of "Jedi" being both singular and plural or if there is a plot point behind it.
They do refer to Luke as "the last Jedi" in the opening crawl for Episode VII...
If I'm not mistaken, at Celebration, Rian Johnson said it's singular.
