That said some of the ship designers for the Rebels animated show can make it canon preferably as Carrion Spike Tarkin's ship he was in the show and will be again probably so they can squeeze that in

I hope not, never liked that ship, by super special I can do everything Tarkin, ship designer, ace pilot, tactical genius, whatever.
And I usually love Tarkin, as one of the best villains ever.

I see four possible ships from the Legends EU that could be a decent fit for the next Scum epic.
Minstrel-class star yacht: Large, personal starship. Two well-know examples, the Star Jewel of Jabba and the Dragon Pearl of Jiliac (both Hutts). Decent armaments (6 turbolasers) and the ability to carry up to 6 starfighters like the z95s of the Star Jewel Guard. Could allow FFG to have a new z95 paintjob/pilots and keep any Starviper/Kihraxz updates in an "Aces" style expansion.
Action series freighter: Lacking defensive shielding and weapons, these are basic cargo haulers that were used by both sides of the Galactic Civil war and independent traders. They were easily modified to carry weapons and shields. Both the Action IV and Action VI versions were seen often in the EU, with the Wild Karrde of Talon Karrde being the most well-known. The Wild Karrde had three turbolasers and the ability to carry one starfighter/shuttle.
Interceptor-class frigate: Extensively modified Action series freighters, the Interceptor frigates were used mainly by criminal organizations/pirates like the Black Sun or Zann Consortium. Heavily shielded, with six turbolasers and three torpedo tubes the Interceptor could definitely be a ship for the Scum that would be able to face the Raider/Corellian Corvette head on. Given that it is a Black Sun ship, I can see the Starviper being the escort ship in this expansion.
Crusader-class corvette: A Mandolorian vessel, the Crusader is an anti-starfighter ship, utilizing its fast speed and large weapons array to destroy enemy starfighters before they were able to engage larger fleet ships. Twelve laser cannons provided ample firepower to eliminate smaller ships while its fast speed meant the Crusader could run away from more dangerous opponents. This ship could be another entry from the Mandolorians into the Scum faction, just like the Protectorate fighter.
Of course, those are just my thoughts. FFG very well could make a new ship, or take something from an upcoming movie/Rebels episode just as easily as using one of these ships. Given that it has taken this long to see the first Scum Epic, I'm not too hyped for seeing another one anytime soon. Now an Aces/Veterans expansion...that would be nice

And without them, it looks naked while with them it looks sleek and dangerous.
The Raider was specifically designed because there wasn't a good, official, imperial ship in the appropriate scale for XWM to be in Epic on the imperial side which matched the Corellian Corvette. (Even now, the Arquitens is a bit bulky)
This should not necessarily be an issue for Scum, as noted there are several alternate options which would likely pass LFL approval. I'd like for it to be the Star Jewel/Dragon Pearl, because I have a fondness for AC Crispin's Han Solo Trilogy, and the scale works out, but there are options. Not sure about TFA era ships in Epic either.

What is it like to be so cool? Being negative is so hot right now. I love the look of the Raider.
I love me some TIEs, and I love me some Star Destroyers. Mashing the two together is just dumb.
Im all for the Star Jewel as it would complete my X-Wing Dark Forces collection, and I would love it on my shelf. Just make sure it has a Tractor Beam card included with the ship. That said, I like the Z-95 as a Rebel ship over scum, so instead I would like it to be released with Rihkxyrk Assault Fighter.
This way, Scum gets a 2nd NEW vessel that the scum and villainy factions like Black Sun and Hutts actually USED more then the venerable Z-95.

You can't critique anything now because you are "negative". Even a brillian idea of making TIE Interceptor to be a corvette.

I like the Crusader Corvette, would be a decent ship for epic as it could balance destroying fighters and laying down big dmg on a Epic ship as well
Also since the scum don't have the same sort of Missile/torp/bomb carries that the rebels and the empire do it would be cool if it had the point defense system to destroy them
Did you even play Empire at War, the Crusader was the weakest Corvette in the game, the only saving grace is to use it as a missile shield for your capitol ships, it could bearly take on fighters

If there is a Scum Aces pack then the Corvette sized Scum Epic won't have another ship. The flip side is, if they do include a ship then a lot more people will buy it. My money is on FFG making more $$$ than not.

I think that it's going to be a long time before the second scum epic is out, and in the interim I am sure there will be some new-canon approved options for them to fall back on.
The Star Jewel is never going to happen, much to my dismay. The "Black Sun" flavored epic is a possibility, but only if they have a tie-in plot line somewhere along the way.
The mining guild had a larger ship in Rebels awhile back. Don't know if it was sufficiently large enough to be "Huge", but that's a possibility.
Or maybe in the Thrawn book that's coming out later this year, they'll fully re-canonize Tallon Karrde.... and then we can all rejoice!

Though the C-ROC doesn't have any particular affiliation with the Cartel/Scyk, so that does argue that having the escort ship be relatable to the Epic ship isn't a huge deal to FFG.

Ah, I was silently assuming a "Veterans" style Black Sun box that updated the Starviper and Kihraxz, as both use "Black Sun _______" for their generic pilots. I know I would buy at least 2 if it fixed those ships, since I've wanted to fly the Starviper since it came out. As others have said, the C-Roc is not even out yet, so I suspect there will be several other releases before we see another Scum epic. Fixing the G-1A at that time would probably not be a terrible idea, given it's almost complete lack of impact as anything other than "Zuckuss crew caddy". (See: autothrusters and the Starviper)
