I've actually thought of picking up a entry level 3D printer for a while and this might actually get me to pull the trigger!

Would something like the XYZprinting da Vinci mini 3D Printer be suitable for printing these? It's 100 microns resolution, but I worry the print bed (5.9" x 5.9" x 5.9") wouldn't be large enough for the card cases. If you have an alternate printer suggestion too I would love to hear it.

There is cut version of the card tray under the same link that will fit on the smaller bed size. You'll need to glue the halves together, but the seems will be minimal.

That printer will be fine for these. I use a cheap knockoff Replicator myself. The bed on the Replicator is a bit larger, but the print quality is similar. These are designed to be easy to print, so any printer in the 150 micron range will be fine.
