Ion bombs? / torps?

Are there ion bombs or torpedoes y-wings can use for disabling capital ships?

Well they are canon now, but I don't think they been statted official yet. You could probably do a stat job pretty easy. Take an existing weapon, increase the crit rating to like 5, give it the ion quality... Should be about it until we get official stats....

Take the normal proton torpedo and add the ion quality to it. It should be enough.

I agree with Lareg. Droid poppers from TCW are basically ion grenades. A torpedo would just be the same concept writ larger and delivered under power. Adding the ion quality would do it. However, arms races being as they are, I suspect the Empire would be quick to ion shield critical systems on capital ships, or to install re-start mechanisms.

I think I will drop the breach in half too. So damage 8, critical 5, breach 3 should make my encounter work

Going to have emergency power up and running when PCS board the ionized ship. Critical systems still functioning, but engines and whatnot offline. Chaos on deck to give pcs something to work with for a infiltration / extraction

Yes this is consistent with what we see both in Rogue One and in ESB.
