For what it's worth, Felicity Jones was rumored to have a two-film contract with Lucasfilm, with a lot of speculation that Jyn Erso would make an additional film appearance after Rogue One. Seems that's not going to be the case, at least with the Jyn Erso character.
As for General Organa's fate in the new trilogy, it could very well be that something happens in between Ep8 and Ep9 that causes her to be out of the picture. I doubt they're gotten very far on writing the script for Episode 9, so it'd be a fairly simple matter to address Leia's absence there.
While I doubt she'll get top-billing for Episode 8 (have seen at least one fan petition requesting such), I'd be very surprised if there's not a "in loving memory of" for her in the credits of Episode 8.
I hope that General Organa dies "in harness", fighting the good fight.
