This is an interesting thing to try. Heck it almost is a solo game do to fact by the time you set dials for everything you forget what you set. But anyways you just put every thing you own one 6x6 playfield and go at it. It puts the EPIC in super epic. One turn take the length of a normal game to finish.

I've raised the topic of constructing a semi scale star destroyer... It's on my list after I figure out Death Star mk II over Endor. I'm thinking hidden 1' panels that are revealed as ships get line of sight... Add the starting entrance and a known point for the reactor... Oh, I need a life....
Well I played super epic at a a store not long ago it's a great team game I commanded one side with a sub commander and one other guy had the other side. We had 700 as the point limit. Trust it was fun but I can't see to many wanting to commit to that game as it is a new game and 100 point list builds die quick deaths. You have to bring swarms and artillery in the form of epic ships with assault missiles and ion torpedoes. It is glorious though. More like war hammer than x wing.

Six of us played a 600 point per side epic last year. Two Tantives and 12 or 14 fighters vs two Raiders and a similar number of fighters. It was GLORIOUS!
We set up a dry erase board with the ships listed in order of activation to keep the turns from getting too out of hand. Worked very well. Ran out of debris tokens way early. Couldn't finish. Next time we will start earlier.
We had an extra rebel transport in the center and the was our cap point we basically had a gentlemens agreement which side had the most ships with in range 3 of it when we quit won. Kills didn't matter it was ships alive in range three that mattered. So scoring was easy.
Biggest I've done is only 400 a side, only two players. Was a blast, well, for me. 600 sounds like a fun next step.
This weekend, I am playing 1000 points per side on 6x6. Planning to post!

My son and I play 720+, last time that included a Tantive and two transports plus I dont know how many smalls on the Reb side. I had a Raider, two Gozontis, four bombers, and at least a dozen Ties. Pretty sure I squeezed in some Ints, but would have to look up the list.

Though unrelated, I once had the chance to play a game of "Trans-dimensional Risk" where we used 3 Risk boards with marked portals to move armies thru. 12 players played 2 hours a night for almost 2 weeks, and the game was called with no victor.

We did a 9x9 scale Epic for the stores birthday. Had the center 3x3 removed as a "planet". Goal was to capture space stations in orbit around the planet. Had 600 points on each side. Was a ton of fun!!! (Ran Arvel, Miranda, and Dutch)
