If you have Greyseer questing and you attack with him, is he still questing also or do you need to remove the tokens off the quest card?

Since a unit can defend from a quest card without leaving it, I think it is consistent that they could attack as well if allowed.

A unit only leaves a quest and remains in play when a card effect specifically says so. No unit ever moves from its zone into any other zone unless a card effect specifically says so.
