I know the Rebels use Astros for their ability to assist & calculate jumps to hyperspace, but there are plenty of Astromechs working for the Empire. Where are they and why don't we see them in ships?
Where are all the Imperial Astromechs at?

Basically, the Empire rarely uses them on small ships, and since X-Wing is mainly about small ships they don't show up very often.

Imperial Astromechs were more used for maintenance or as couriers, the only Imperial starfighters that used them were the ARC-170, V-Wing, Eta-2 Jedi Starfighter, and the X-Wing before they were stolen by the Rebellion.
The ARC-170 is in the game as a Rebel ship without Rebel only so it is safe to say it won't be added to the Empire. The V-Wing could be added to the Empire but I think it will be either given to the Scum or the Rebels to continue their collection of Alphabet ships. The Empire might see the Eta-2 Jedi Starfighter considering Vader used it but they might not give it the astromech slot, or incorporate it a little differently. And well we all know the X-Wing is more a Rebel ship even if it was stolen.
IF you want an actual reason though, it is because they never thought of releasing Imperial ships with Astromech slots, hence they never made the Astromech upgrades cards say Rebel Only, hence is why we they created the Salvaged Astromech upgrade for Scum.

About the V-Wing, we had a player in an rpg that wanted one. The Empire phased out the Astromech carrying model for one without an Astromech making the V-Wings with the Astromech somewhat rare.
