First of all, I think you should just bring your squads and try them all out for yourself. I know it's tempting to bring the World Champion squad or similar from the get go, but you get much more enjoyment and feel for the game by trying out stuff on your own first. Play figures you think are cool looking or have interesting abilities. Try to make them work over a couple of games without changing too much on your lists. There are some obviously strong Empire cards like the eStormstrooper and Zillo, but that still leaves you a lot of room for filling out the rest of the list.

I'm not sure where the 7pt regular stormtroopers came from or are they supposed to be snow troopers? I've found that the regular storm troopers just don't last long enough for me, but that may have more to do with who I play most frequently. I've seen some success from having the old trooper lists overwhelm the opposition. where there is just too many guys to get them all.

I don't have a problem with either of the bottom two. I prefer the elite probe droids, but keeping a close center of your army and having the officers work with the droids and having extra activations probably will out weigh that point. So I think you did right by staying the course with these next two lists. Command cards will be key as to your success. The bottom list will benefit from the Jet troopers coming out I think.

They were supposed to be snow troopers, I was thinking the bottom two lists would be more reliable I will try both but the droids seem to work well with officers but they might be a little to squishy to go the distance

Regular probe droids are fine as filler, but generally the 2 points extra for the elite is fantastic value.

I think the elite Probe droids are some of the most overlooked figures, they're fantastic for their cost.
