As Dras points out the game will tell you what sized cards are in the box with their color coding. FFG uses this code in the packaging of their sleeves.
Yellow is the "mini-american boardgame" size (which is how other companies who make such thing identify them.) These are the various upgrade cards and the damage deck.
Orange is the "tarot" size. These are the ship cards. These are the toughest to find.
Gray is the "standard card game" size. These are the objective and squadron cards. These are the easiest to find as they are the same size as Magic cards so pretty much anywhere you'd go to buy sleeves will have something this size.
I've some non-FFG brand of the Yellow size and prefer the FFG ones.
The FFG versions of any of the sleeves are all perfectly acceptable. Note that there are differences between brands as to how they feel and how glossy they are and so on.
Pretty much all the brands fall into the same price points so just get what is convenient. Note that there may be some variance in sizes between brands not all be exactly the same size to each other so be sure to use all the same brand for the damage cards but for everything else it doesn't matter as they don't get shuffled and drawn randomly. It really isn't that big a deal in the case of the damage deck either compared to making sure you've uniformity in an LCG or CCG.
Also note that each expansion will say "one orange" but there are fifty in a pack so one pack will sleeve the ship cards of twenty-five models.
