When the Thief steals from the store/merchant does he take only the purchase cards available at that store or any from the purhase deck. His card says any from the purchase deck (many of those items are not in the board space store).
When in battle, do you get to use the bonuses from all of your followers?

In the listed encounters (Village, Market, Market Day), he can take ANY Purchase card. Mule-hoarding in the Village is a valid play with Thief.

Sure. Only as Gladiator would you probably even choose not to use Follower(s) in battle, depending on the opposing character's Str (since he might lose a Follower if he lost the battle).

The thief can buy and steal at the same time in the village, market and market day.
