We're about to go beyond the time of episode 6 and I'm debating to myself whether to have the characters carbon froze to the time of ep 7 or use the EU I grew up with. (Luke starts the academy on Yavin as an example)
What do you guys think would be best?
Whatever you like best but you have to know the material that is going to be released going forward will support whatever post Ep 6 timeline is being developed and there won't be new material for the EU.

I think that guy created that idea.
I would go with what was presented in The Force Awakens . I'm sure you have your reasons but skipping over 30 years by freezing your PCs in carbonite seems like a missed opportunity.
The Aftermath novels and Marvel comics can help you fill in some gaps.
Why not both? There is such a wealth of stuff out there to use to support your own canon. You can chop and change and take bits of the EU stuff, come up with your own and even use stuff from the new revised canon. It is going to be another few years before the full revised canon fleshes out the full details of what happened between episode 6 and 7 so you may as well have fun with your own alternative campaign canon.
I personally use my own AU, where Lord Skywalker defeated obi-wan, and saved/enslaved padmae as his queen. He also becomes emperor. Much more fun. Luke and Leia also serve him, Luke as a Justicar(new force order) and Leia as a diplomat. Background info is still all canon, like locations ect. But everything else i make up as a group goes. I have the Empire fighting a war against galactic slavery, as well as trying to solidify its borders.
I would use whatever; ironically freeing up the EU allowed us to use EU characters more freely
