I checked the BIG ref guide, FAQ and instructions and did not find this (but I could also be blind). Can a ship fire/attack a ship if another ship is in it's firing path (Either yours or Opponents)? Basically, can you use a ship to block another from being attacked?

Ships ignore other ships when it comes to firing, unless a ship is equipped with Tactical Jammer, which specifically allows it to obstruct attacks.

The most that can happen in standard play is that a large ship can equip Tactical Jammers which means it obstructs enemy attacks like an obstacle does (i.e. attacks through it get +1 defence die) but otherwise, shots through ships are not affected.
