So my first character is finally build and I think I have an idea for his background. What I am currently missing is the home planet.

I am searching for a planet similar to Corellia (Human population, easy access to tech, some cities but also some natural areas). It would make sense if it is not THAT close the to ideals of the empire, and if it had some kind of Jedi history, so I could have found hints about them.

Anyone of you got a good idea? Maybe a Corellian Colony?

Socorro is a Corellian colony world. It's pretty much the definition of a fringe world, too. The Jedi tie-in is the sticking point, though. It's not inconceivable for there to be Jedi remains nearly anywhere in the galaxy. An old cache, outpost, crashed ship, etc.

Wasn't there an ancient Jedi-temple somewhere on Socorro?

If the game is not set too long after ANH then I'd recommend Alderaan. House Organa had several members join the Jedi Order in Legends continuity.
